Well, we did it. We have reached the last leg of 2020. Go us 🥳

I noticed a lot of people put up their Christmas decorations very early in November (on the 1st for some) which I actually liked seeing this year. Normally this annoys me but it was nice to see people getting excited for something this year. We didn’t decorate but we don’t really have any decorations. I have one Santa and a Christmas themed Mickey Mouse teddy…. we’re not so into Christmas.

Favourite Book | The Invisible Life of Addie LaRue by V.E. Schwab

Even if I had read as much as I intended in November, this book would probably still be my favourite. It’s so good! Beautifully haunting and somehow uplifting and relatable despite the fantastical situation.

Favourite Recipe | Chipper Style Taco Chips

Since we’re moving to the countryside next year, we’re trying to cut back on take-away and delivery to make the adjustment a bit easier. Himself loves an auld taco chips from the chipper but the sauces you get in the shops are nowhere near as nice. So, I tried making one. Himself said it tasted nothing like the chipper but it was nicer!!!! I’ll take that, thank you very much 🙂

Just so you know, this taco sauce is absolutely completely nothing like what taco is supposed to be. It’s something that exists in chippers (fish and chip shops) in Ireland, the UK and maybe Australia and New Zealand. I’m not sure where else does it but it is not real or proper taco anything. It is chipper taco and that’s it.

Taco Sauce

I didn’t pay attention to quantities of the sauces just kept mixing in teaspoon by teaspoon until it tasted nice.

  • Mayonnaise
  • Ketchup
  • half tsp Cayenne Pepper
  • half tsp Cumin
  • half tsp smoked salt

Stir it all together. Adjust seasonings and sauces until you get something you like the taste of.

Mince

  • 500g Mince Meat
  • small chopped Onion
  • half diced Red Pepper
  • 1 tin chopped Tomatoes
  • half tsp Cayenne Pepper
  • 1 tsp Cumin
  • 1 tsp Smoked Salt
  • 1 tsp Pepper
  • half tsp Smoked Paprika

You will also need some chips (fries) and grated cheddar cheese (however much you want I won’t judge 😉 )

Fry the onions, peppers and mince meat until the meat is cooked. Add the seasonings and tin of chopped tomatoes. Leave to reduce for 20 to 30 minutes or until the sauce thickens.

While the sauce is reducing, cook your chips. I used oven chips in the airfryer. Once everything is cooked, add the chips to a small oven dish. I used a bread tin cause it was the best fit. Add a layer of the meat over the chips. Add the taco sauce over that and top with the grated cheese. Put in the oven at 200c for about 10 minutes or until the cheese is a delicious meltiness.

I love getting my planner for the next year. It fills me with excitement for all the things I’m going to do. I only use planners for content and now for Etsy and Ko-fi as well but never for my personal life. I have a wall calendar that I keep all our real life stuff on. After March this year our calendar went from having fun stuff to only tracking which bin was due but I have high hopes for 2021.

I spotted the Legend Planner after buying my planner for 2020 so it’s been on my wishlist for all year and I finally got it this month. I love it! It has sections for goal mapping and planning, a vision board, self-discovery and awareness, annual goals, 3-monthly goals, monthly goals and weekly pages with trackers, lists, and dotted spaces.

Favourite Movie | Vivarium

“Hoping to find the perfect place to live, a couple travel to a suburban neighbourhood in which all the houses look identical. But when they try to leave the labyrinth-like development, each road mysteriously takes them back to where they started.” – Google

This movie was strange, strange, strange but interesting. It never really explains what’s going on but you can guess pretty strongly. It’s a creepy story and makes you question the value of the white picket fence ideal.
