Hello friends, this week I’m cooking up some taco fries and mini apple pies. I had some short crust pastry leftover from making a seafood pie and decided to whip some small apple and caramel pies. I had to use eating apples instead of cooking apples but they turned out quite nice. Caramel and apples is a match made in heaven!
Since we’re moving to the countryside next year, we’ve been trying out recipes of things we usually get delivered. Himself is a big fan of taco chips so that was this week’s experiment. He said it didn’t taste anything like one from the chipper but it was even nicer!
Mini Caramel and Apple Pies
- Short Crust Pastry
- Apples (cooking apples work best)
Yet again I didn’t pay attention to quantities but I was making this to use up what pastry was left so I was kind of judging by eye. I stewed 3 or 4 apples with a spoon of sugar and water. I used a cup to make circular cut-outs in the pastry. I then spooned about a teaspoon of caramel in the centre of each (I would add more if I were making these again) and about two spoons of apples on top once they were cooked. Before folding over the pastry, wet with edges with a beaten egg or some milk. Fold over and press down with a fork. Brush the tops with more of the egg or milk and pierce with a fork. Bake in the oven at 200c for about 15 minutes.
I waited for mine to cool down and added some caramel, more apples and a dusting of cinnamon before eating. They were absolutely delicious.
- 500gr Mince Meat
- 1 small Onion
- Half Red Pepper
- 1 tin Tomatoes
- 1tsp Cumin
- 1tsp Cayenne Pepper
- 1tsp Smoked Salt
- Grated Cheddar Cheese
- Cayenne Pepper
To make the taco sauce I mixed the mayo, ketchup, cumin and cayenne pepper together until it tasted nice. I didn’t really pay attention to how much I was using. Just kept adding until it was taco-ish. I used olive oil to loosen up the mixture cause the mayo was pretty thick.
Dice up the onion and red pepper. Lightly fry until the onion is translucent but not browning then add in the mince. Fry until cooked and add the seasoning and tomatoes. Leave to reduce for 20 to 30 minutes or until it thickens.
Cook your chips however you prefer 🙂
Layer up everything like a lasagna! I used a bread tin cause it fit best. Add the chips, then the mince, taco sauce and top with grated cheddar cheese. Pop in the oven until the cheese is a delicious meltiness.
