March is finally over and with it another Irish Readathon. I kind of dropped the ball with the readathon this year with everything that has been going on in the world but I enjoyed it none the less.
Just before the Irish Readathon ended we decided to have a 24-hour readathon from 8 am Saturday – 8 am Sunday. I started a little early cause I woke up at 6 am on Saturday and decided I may as well jump in. I read Constellations by Sinead Gleeson and Belinda by Maria Edgeworth. Apple Waffles
4 Cooking Apples stewed in a few spoons of caster sugar and a drop of water.
Batter
I never follow a recipe for crepes or pancakes, I just eyeball everything but this is what I use.
- Flour
- Milk
- Egg
- Pinch of Salt
- Sugar
